Chocolate Trifle

"At wedding functions, folks line up for this trifle. And it is so easy to make!"






Ingredients :


* 1 (19.8 ounce) package brownie mix

* 1 (3.9 ounce) package instant chocolate pudding mix

* 1/2 cup water

* 1 (14 ounce) can sweetened condensed milk

* 1 (8 ounce) container frozen whipped topping, thawed

* 1 (12 ounce) container frozen whipped topping, thawed

* 1 (1.5 ounce) bar chocolate candy


Method :

1. Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.
2. In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
3. In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving.

Chicken Satay and Thai Peanut Sauce

Ingredients :


CHICKEN:
  • 1/2 cup canned coconut milk
  • 1/4 cup fresh lime juice (2 limes) or canned
  • 1/4 cup peanut oil
  • 2 tablespoons fresh cilantro -chopped
  • 1 teaspoon fresh ginger - minced
  • 4 boneless, skinless chicken breasts halves
  • 6 bamboo skewers

 
SAUCE:

  •  1 1/2 cups canned coconut milk
  •  6 tablespoons creamy peanut butter
  •  3 tablespoons brown sugar
  •  3 tablespoons green onion - minced
  •  2 tablespoons Thai style chile sauce or Thai red curry paste
  •  2 teaspoons rice vinegar - unseasoned
  •  1 teaspoon lime zest - minced
  •  1/2 cup fresh cilantro - minced
  •  3 tablespoons fresh basil - minced

 

 

 
Method :

 

 CHICKEN:

 
- Place coconut milk, lime juice, oil, cilantro, ginger, sugar and garlic in a large mixing bowl.

 
- Stir to dissolve sugar.

 
- Cut each chicken breast lengthwise into 3 strips and let marinate in a bowl in the refrigerator for 3-4 hours.

 
- Soak bamboo skewers in water for at least 1/2 hour.

 
- Thread chicken strips onto soaked skewers and grill over direct medium heat for 3-5 minutes on each side.

 
- Watch closely. Serve warm.

 

 

 
SAUCE:

 

 

 
- Place coconut milk, peanut butter, sugar, soy sauce, onion, chile sauce, garlic, vinegar, lime zest, cilantro and basil in a medium saucepan.

 
- Bring just to a simmer while stirring. Do not boil.

 
- Continue cooking until sauce thickens, approximately 5 minutes.

 
- Remove from heat, store in the refrigerator if not using right away.

 
- Reheat before serving.

 
- After removing from heat you may strain the sauce before serving if desired but not necessary.

Overnight Turkey Lasagna - Wheat and Gluten Free

What is Gluten Free ?




"Wheat flour has a high gluten content while rice flour (brown and white), potato flour, chickpea flour, quinoa flour, cornmeal, soy flour, sorghum flour, and buckwheat flour are gluten-free and can be safely consumed by gluten-intolerant individuals."


Recipe : Overnight Turkey Lasagna - Wheat and Gluten Free


 

 

 
Ingredients (Serves 4) :

 

 
- 1 pound Italian ground turkey
- 1 sweet onion, chopped
- 1 teaspoon oregano
- 4 cups spaghetti sauce, prepared
- 1 cup water
- 8 ounces sliced mushrooms (canned), drained
- 2 cups Ricotta cheese (low fat)
- 1 tablespoon dried parsley
- 1 egg, slightly beaten
- 8 ounces lasagna noodles (wheat free and gluten free), uncooked
- 1 pound Swiss or Mozzarella cheese, shredded
- 1/2 cup to 1 cup Parmesan cheese, reserve 1/4 cup for topping

 

 

 
Method :

  
  1. Brown ground turkey, onion and 1/2 teaspoon oregano in a large skillet. Cook thoroughly, drain. Add spaghetti sauce, water and mushrooms. Simmer approximately 5 to 7 minutes.
  2. In a bowl, combine Ricotta cheese, parsley, the remaining oregano, egg and about 3/4 cup Parmesan cheese.
  3. Spread 1 1/4 cup spaghetti sauce on the bottom of the prepared baking dish. Layer uncooked lasagna noodles on top of sauce. Then, layer half the Ricotta cheese mixture and sprinkle with half of the grated cheese. Repeat spaghetti sauce, noodle and Ricotta cheese layers. End with a layer of spaghetti sauce and sprinkle with 1/4 cup of Parmesan cheese.
  4. Cover and refrigerate overnight or a minimum of 8 hours.
  5. Bake in preheated oven at 350บ F for approximately 50 to 60 minutes. Let stand approximately 15 minutes before serving.
